Vegan Sushi Ideas

There is something about Sushi that I  have always loved. Before I became a Vegan I used to treat myself to a Japanese Restaurant every once in a while. Looking back I am not sure if it was the love for the fish or more the love for the precision, art, look of the sushi. There is something special about Japanese food, a geometrical precise art and composition that makes every plate look really pretty, or at least it looks like that to me.  Any way even in my pre-vegan Era I use to eat a Maki Sushi  made by rice and Algae and some really thin slices of cucumber. I must have been preparing myself for my Vegan life without knowing, and after I became a Vegan my love for sushi hasn’t changed, if anything I just enjoy it even more and l love to experiment with New Vegan Sushi Ideas every time I have a chance.

Making Sushi At Home 


One thing about Japanese restaurants, they are not always cheap, they are definitely delicious but affordable to everyone not so much.

Around the area where I live there aren’t many and the one we have they are more like a Chinese Restaurant turned Japanese and it’s not exactly the same thing.

I often go to a store where they sell some Freshly prepared Sushi and they do have a Vegan Sushi option which is the one I always take but for 6 mini pieces you end up paying about 5 €  and the pieces disappear in a matter of minutes

So the best solution is till make your own Vegan Sushi at Home.

Making vegan sushi at home in Japanese style is probably one of  the easiest thing you can do in the kitchen.

You can prepare your own delicious homemade sushi with no fish and choose exactly what you want to put in it.

I love the Maki sushi which is the classic rolls of seaweed and rice, and  also the vegetable Nigiri, small rice dumplings perfect for  vegans and vegetarians.

The only down side, if you can call it that, is that the preparation of sushi needs some time but it is really worth it because it comes out delicious, is very cheap and presents well.

So here are some Vegan Sushi ideas that have been inspired by my Asia Traveling time and also by all the different Japanese restaurants I visited through the years.

Sushi with tofu and vegetables

Besides being delicious , Sushi is a great and very easy option for a take away food, whether you want to take to the beach, office or park. You can serve them as an afternoon snack or even as a dinner and everyone will love them, including your non vegan friends!

This Sushi is Gluten-free, fresh and healthy; what else could you possibly ask?

Ingredients to make approximately 24 Maki Sushi:

  • 250 g of sushi rice
  • ¼ glass of rice vinegar
  • 1 tablespoon of brown sugar or brown sugar
  • 1 pinch of salt
  • 4 sheets of Nigiri seaweed

For the filling of the Sushi you can choose between:

  • Cucumber (one of my favorites)
  • carrots
  • peppers
  • tofu
  • Roasted peppers
  • Avocado
  • type of salad (lettuce for example)
  • Chives
  • Sesame
  • Alfalfa

Let’s prepare the Sushi


To prepare the Maki it will take you approximately half and hour

At first you are going to have to rinse the rice thoroughly with cold water until the water comes out clean. Make sure that the water gets as clean and transparent as you possibly can
Then you are ready to cook the rice. Now to cook rice properly you should use 2 parts of water for each of rice and when the water is boiling add the rice. Add also  the salt, lower the heat to a minimum and cover the pot. You should cook  the rice for about 10-15 minutes until it has absorbed all the water. Put the rice on one side and let it cool.

Let’s now prepare the rice dressing for the sushi: mix vinegar and sugar in a glass and stir until it dissolves. Add the dressing to the rice.


Time to make the Vegan Maki Sushi

Wet your hands with a little bit of  water to work the rice. Fill some ¾ of the nori seaweed with the rice, in a layer of one centimeter approx. thick

Place the vegetables in strips and the other ingredients on top of the rice about 3-4 centimeters from the bottom edge. Roll the sushi starting at the edge with the rice.

To seal the roll, wet the seaweed with water. To make it easy to cut, dip the blade of a knife with water and cut the roll into 6-8 pieces.

Sprinkle  some sesame seeds on the  vegetable makis.

Your Sushi is ready to be served: best way to do it is to serve it with some soy sauce and for the lovers of Spicy add some Wasabi to the mix and get your mouth on fire.

Caution though: if you have never tried Wasabi before you should be careful and try it in a small dosage!

100s Combination to make the perfect Vegan Sushi

To Prepare the Vegan Sushi you can really use any type of vegetable you have in the fridge. Some of my favorite combinations of vegetables are making Sushi using dried tomatoes, arugula and tofu

The intense flavor of the dried tomato and the spicy touch of the arugula, accompanied by the bittersweet rice and the sea aroma of the seaweed, create a spectacular set.

Or if you prefer something not too spicy you can mix some cucumber and carrots with a little bit of alfalfa and avocado or even take some dried tomatoes, tofu, chopped scallions, roasted red pepper on top and sesame and mix them all together to create another variation of a Vegan Sushi

Want to try to make a Nigiri?

For those of you that don’t know what a Nigiri is, it’s kind of a ball of wet rice where usually you put a slice of raw fish on top, I am pretty sure everyone has seen them before but you might not have known they are called Nigiri.
The beauty of it is that you don’t need to put a slice of fish on top of the rice but you can easily make some Vegan Nigiri as well

How? Easy:

Wet your hands and take a little rice.

Shape it into a ball, crush it and put a few drops of wasabi in the center. Close the vegetable nigiri forming a cylinder. Add a slice of roasted pepper on top and sprinkle with sesame and chopped chives. Done!

It is so simple you can make it literally everyday with a different type of vegetable on top even though I will admit the Roasted pepper is the bomb!

Things to remember

To prepare Vegan sushi there are a few things you should have in your kitchen that will make the entire process easier: you should get the classic bamboo mat or if you don’t have one you can use a sheet of vegetable paper  and roll the rice with that.

To cut the Sushi  always  use a good knife.

Keep a bowl of water next to you so that you can wet your hands often, so that the rice does not stick.

And don’t forget to buy specific rice for sushi; don’t try to make Sushi with another ordinary type of rice, like Basmati rice , long grain or rice  for risotto. The Sushi will not be the same

So this is it, maybe not too quick, but definitely easy, tasty and healthy.
